These tofu and peach skewers are not just a tasty treat; they’re packed with nutrients that offer a range of health benefits.

Protein
Tofu is a fantastic source of plant-based protein. Protein is crucial for building and repairing tissues, whether it’s your muscles after a workout or your skin and hair. It’s also essential for making hormones and enzymes that support various bodily functions, and it plays a significant role in maintaining a healthy immune system. So, with tofu in your diet, you’re giving your body the building blocks it needs to stay strong and healthy.

Vitamins and Minerals
This recipe is a nutrient powerhouse, loaded with a variety of vitamins and minerals. Vitamin A, found in peaches, is essential for eye health, immune function, and skin health. Vitamin C, also abundant in peaches, is a powerful antioxidant that supports your immune system, aids in collagen production, and helps your body absorb iron from plant-based foods. Calcium, which you’ll get a bit from tofu and potentially fortified products, is crucial for strong bones and teeth, as well as for nerve signaling and muscle function. Iron, present in tofu, is essential for making hemoglobin, the protein in red blood cells that carries oxygen throughout your body. Iron also supports metabolism and energy levels.

The avocado oil used in this recipe is a fantastic source of healthy fats, including monounsaturated and polyunsaturated fats. Ingredients (serves 2)

  • 12 ozs Tofu (extra-firm, pressed, and cubed)
  • 2 Peach (medium, pitted and cubed)
  • 3/4 cup Red Onion (cut into chunks)
  • 4 Barbecue Skewers
  • 2 tbsps Avocado Oil
  • 1 tsp Chili Powder
  • 3/4 tsp Garlic Powder
  • 1/2 tsp Sea Salt
  • 1/4 cup Sweet Chili Sauce
  • 1/2 Lime (juiced and zested)

Directions

  1. Preheat the grill to medium-high heat.
  2. Evenly divide the tofu, peach, and red onions between skewers. Brush with oil.
  3. In a small bowl, mix together the chili powder, garlic powder, and salt. Sprinkle this over the skewers evenly, coating all sides.
  4. In another small bowl, mix together the sweet chili sauce and lime juice.
  5. Grill the skewers for eight to 10 minutes, flipping occasionally until the tofu has grill marks. During the last two minutes, brush the sweet chili glaze over the skewers.
  6. Divide onto plates and garnish with lime zest. Enjoy!

Notes

  • Leftovers – Refrigerate in an airtight container for up to two days.
  • Serving Size – One serving is approximately two 10-inch (25 cm) skewers.
  • Wooden Skewers – Be sure to soak the skewers in water for at least thirty minutes prior to use.
