This grilled zucchini and couscous salad is a nutritional powerhouse, offering a range of benefits for your heart, bones, and immune system.

Heart Health
The extra virgin olive oil in this recipe is a fantastic source of monounsaturated fats. These fats are known to help reduce levels of ‘bad’ LDL cholesterol, which can clog your arteries and lead to heart disease. At the same time, they help increase ‘good’ HDL cholesterol, which works to remove LDL cholesterol from your bloodstream. The couscous provides a healthy dose of dietary fiber, which not only aids in digestion but also helps lower cholesterol levels. Fiber binds with cholesterol particles in your digestive system and helps remove them from your body before they can do any harm.

Bone Health
Feta cheese and vegetable broth contribute significantly to your calcium intake. Ingredients (serves 2)

  • 1 cup Couscous (uncooked)
  • 1 1/4 cups Vegetable Broth (hot)
  • 1 1/2 tsps Raw Honey
  • 1/2 tsp Cumin (ground)
  • 1 tbsp White Wine Vinegar
  • 2 tbsps Extra Virgin Olive Oil (divided)
  • 1 Zucchini (large, sliced lengthwise)
  • 1/3 cup Feta Cheese (diced)
  • 1 tsp Lemon Zest
  • 1/4 cup Mint Leaves (finely chopped)

Directions

  1. Preheat the grill to medium-high heat.
  2. Place the couscous in a bowl and pour the hot broth over top. Cover and let it stand for five minutes or until the broth has been absorbed.
  3. Make the dressing by whisking together the honey, cumin, vinegar, and half of the oil.
  4. Brush the remaining oil onto the zucchini slices. Grill for two to three minutes per side or until tender.
  5. To serve, place the zucchini, feta, and couscous on a serving plate. Season with the lemon zest and mint and top with the dressing. To serve, divide evenly between plates and enjoy!

Notes

  • Leftovers – Refrigerate in an airtight container for up to three days.
  • Serving Size – One serving is approximately two cups.
  • More Flavor – Serve with your favorite cooked protein.
  • Additional Toppings – Add chopped toasted nuts.
